Street Style Corn Avocado Toast

What can give you Cali vibes through and through more than avocado and Mexican street corn? Street corn, avocado, lime and a few on hand ingredients takes quick and easy meals to a cool Southern California level. 

You know we all call it Eloté and it's totally vibes on vibes on vibes.

This match up was meant to happen.

2 slices bread toasted (try various breads like rye or sourdough)

1 bag frozen roasted corn (try Trader Joe's fire roasted brand) or one fresh corn on the cob with corn removed

1 lime cut into quarters

microgreens

ripe avocado

1 teaspoon vegan mayo

1 1/2 teaspoon Mx. Adobo-ish salt free spice blend 

1 1/2 teaspoon Everything Bagel + Flaxseed spice blend

vegan Parmesan cheese or feta or cotija cheese

 1. Heat corn. Add 1 teaspoon Mx. Adobo-ish salt spice blend and butter. Stir

2. In a separate bowl mash avocado, half of lime juice, and mix with mayo and rest of spice blends.

3. Spread avocado mash onto toast. Add corn, cheese and microgreens on top.
