Mexican Cauliflower Rice Vegan Scramble

This quick recipe came about from leftovers and took less than 20 minutes to prepare.

1. Start by adding a little olive oil on a pan and sautée cauliflower rice and chopped green onions. Seasoning with our salt free Mx. Adobo-ish spice blend.

2. After about 5 minutes, move the cauliflower mixture over to one side of your pan. And add spicy hound vegan sausage (I love the one by Impossible)

3. Brown sausage. 

4. I then stirred everything together and pour the rest of vegan eggs (made by JustEgg). Season with a little more of Mx. Adobo-ish salt free spice blend. Added leftover vegan Chao shreds (made by field roast)

5. Added tomatillo salsa on top
