Easy Creamy Oatmeal for a Fast Break

Here's a quick hack to make creamy oatmeal every single time on the stovetop. All you need is oats, nut milk, spices, nuts, and berries. 

This simple pantry staple is a great source that's rich in soluble fiber, aids digestion, antioxidants and for warming you up from the inside out.

Use Irish steel cut oats or if you need gluten free try Zēgo 

To a pot add: 

1 cup almond milk (or other nut or seed milk and so so yumsville with canned coconut milk)

1/2 cups oats

1/2 tsp pumpkin+cardamom salt free spice blend

pinch of sea salt (optional)

1 cinnamon stick (remove once oats are cooked) 

1.  Add all ingredients to a small pot and stir.

2. Cook over medium heat until it comes to a boil.

3. Lower heat and add a lid. Stir frequently. If too thick, add more nut milk or little water. I like to remove the pot from the heat once its cooked and let it sit for a couple of minutes to thicken and then add a little more nut milk to my bowl just before adding toppings.  

Topping Options:

vegan butter

almonds

blueberries

pomegranates

currants

apples (great to chop and cook with oats too)

mashed banana (great to cook with oats too)
