Creole Acorn Squash Cauliflower Rice Stuffing
Our no fuss, spicy-sweet, flavorful stuffing is made with 3 main ingredients and our limited edition salt free Bayou Classic-ish spice blend. The entire entire dish takes only 25-30 minutes from stove to plate.
1-2 Acorn Squash, leave skin on, slice and removed seeds
Avocado or Olive oil
Vegan Butter (love Miyokos brand)
Sausage, sliced or crumbled (try Field Roast vegan Chipotle or Italian)
Trader Joe's Riced Cauliflower Stuffing (in the freezer section) best to thaw before cooking
Bayou Classic-ish spice blend (salt free)
Fresh sage leaves
Preheat oven to 360 degrees
Rub the acorn squash slices with oil on both sides, sprinkle both sides with Bayou Classic-ish spice blend on both sides. Place on baking sheet. Roast in oven until fork tender.
While squash is roasting, sauté the sausage in pan. vegan butter and riced cauliflower stuffing to pan. Season with Bayou Classic-ish spice blend. Add a few tablespoons of vegetable broth. Let simmer. Once liquid is almost completely reduced, put lid on and remove from heat.
Once squash is cooked, add the riced cauliflower stuffing in the center of each. Drizzle lightly with maple syrup. Place back in the oven for about 5 minutes.
Remove from oven, then add fresh sage leaf on top or sprinkle chopped sage on top before serving. Cover with foil to keep warm until ready to serve. Use a spatula to place on your serving dish.
